4 green plantains (peeled)
2 garlic Cloves
Vegetable oil (for frying)
2 cups of chicken (broth – heated)
Step by Step Instructions
Cut your green plantains into 2 inch pieces and make sure that they are peeled.
Once the vegetable oil is nice and hot, place your green plantains in the frying pan until golden brown (or for about 5 minutes). Make sure you turn them over once. Remove your plantains from your frying pan and set them on a paper towel to drain until all your plantain pieces are fried.
In your IMUSA Mortar, add your garlic cloves along with a pinch of salt, then crush together and pour into a small bowl and set aside.
With a cloth or paper towel, wipe clean your IMUSA Mortar – DO NOT WET. Then spoon in about a teaspoon of the hot oil. This will prevent your plantains from sticking.
To make your mini-mofongos, add about 2-3 pieces of your fried plantains and begin to mash. Form a cup mold, and spoon in some of your hot chicken broth to smooth it out.
Spoon in some of your crushed garlic mixture and keep mashing together. Once you have the right mold, add the stuffing of your choice. (e.g. grilled chicken, shrimp or beef).
Using a plastic spatula, carefully go around the IMUSA Mortar to detach your mold. Take a flat plate and cover the top of your IMUSA Mortar then turn upside down so that the filling is on the inside and covered by the mixture (Upside down cup mold).
Drizzle some more of your stuffing on top and serve!
